A revisited Lorraine quiche: a delight for the tastebuds

Dear foodies, it’s time to shake up our culinary habits and explore new gastronomic horizons. Today, we offer you a bold twist on the classic Lorraine quiche. This version, enhanced with leeks and smoked salmon, is a true delight, highly praised by our Marmitons.

This recipe, derived from a French classic, offers plenty of room for customization. The option to swap salmon for smoked trout was particularly appreciated. The keys to success

To make this leek and smoked salmon quiche for six guests, you will need:

4 tablespoons of light sour cream
2 leeks
4 slices of smoked salmon
2 eggs
50g of grated gruyère cheese
6 tablespoons of milk
1 shortcrust pastry
Nutmeg
Salt and Pepper

After preheating your oven to gas mark 7, start by rinsing and finely chopping the leeks. Sauté them in a hot pan with a little butter and cream. Season with salt, pepper, and nutmeg to your liking.

Spread this mixture on the pastry base and cover it entirely with smoked salmon. In a bowl, mix the eggs, cream, milk, grated gruyère cheese, salt, pepper, and, if desired, a bit of nutmeg. Pour this mixture onto the quiche and bake for about thirty minutes. Let it cool for a few moments before enjoying.
