Choosing the Potato and Cooking
To succeed in making stuffed potatoes, the choice of potato variety is crucial. Opt for firm-fleshed potatoes such as Charlotte, Jazzy, or Nicola. If you prefer floury potatoes, Bintje, Agria, or Victoria will be perfect. Once you have chosen your potatoes, make sure to wash them well without peeling them.
Regarding cooking, at 750G, we recommend a two-step cooking method, steaming and then baking for a nice gratin. However, you can also opt for a “baked potato” cooking method, wrapped in aluminum foil.
Recipe Ingredients

4 large potatoes
50g of parmesan
8 tbsp of sour cream
1 bunch of chives
Salt and pepper

Preparation of Stuffed Potatoes
The preparation takes 20 minutes and cooking, 30 minutes. Start by cooking the potatoes in water or steam without peeling them. Then, hollow out the potatoes, put the flesh in a bowl, and roughly mash it with a fork. Add the chopped chives, cream, salt, and pepper. Generously fill the potatoes with the mixture, grate some parmesan on top, and bake them until gratinated. Serve with seasoned mesclun salad.
