Turkey, An Economic Substitute
To continue enjoying this dish without breaking the bank, there is a simple solution: replace veal with turkey. This white meat, just as tasty, is significantly less expensive. Here is a proposed recipe for a turkey blanquette for four people:

Preparation of the Economical Blanquette
Start by preparing the turkey by cutting it into pieces and browning it in a pan. Prepare a broth with the bouillon cubes, peeled and chopped carrots, and an onion studded with a clove in 1.5 L of water. Then add the turkey.
In another pot, make a roux with 50 cl of the broth, lemon juice, and peas. Cook the mushrooms separately. Add the warmed artichokes to the turkey in the pot. Then pour the contents of the pot into the pot and add the heavy cream. Mix well to obtain a smooth sauce.
