Far from the usual sausage meat stuffing, Gaston Savina’s recipe is more respectful of the planet and suitable for all dietary needs. “It’s impossible to ignore plant-based ingredients in cooking. We must adapt to our planet and those around us,” the chef states.

His stuffing, made with smoked tofu, mushrooms, chestnuts, spinach, and onions, not only adds a lot of flavor to the guinea fowl, but also provides a nice moisture that guarantees juicy meat: “it is therefore impossible to have dry meat with this technique.”

Gaston Savina’s guinea fowl stuffed with vegetable flavors recipe

Preparation of the vegetable stuffing:

2 onions, finely chopped
150g stale bread, crumbled
200g smoked tofu, crumbled or grated

Preparation of the guinea fowl:

1 ready-to-cook guinea fowl (about 1.5 kg)
50g soft butter
