Preheat your oven to 180°C. Start by slicing the leeks and simmering them gently for 20 minutes in a pan with a little fat, seasoned with salt and pepper. Meanwhile, in a bowl, crush the tuna and mix in the curry, cream, and egg. Mix everything well.

Next, divide a sheet of brick pastry in half. Each half will be used to make a triangle. Fold the half-sheet in half lengthwise to get a rectangle. Place a teaspoon of your tuna mixture and a teaspoon of leeks 2 cm from the right edge. Then, fold the bottom right corner to form a triangle, like a samosa.

Finish each triangle with egg white, line them up on a pie dish, and bake for 20 minutes at 180°C. Enjoy them fresh out of the oven, accompanied by a fresh salad.

This recipe for tuna and leek bricks is not only delicious but also very easy to make. Perfect to delight your guests at your next meal!
