According to Cécile Lorenzo, Head of Research & Innovation at Danone France, more than 600 kefir-related innovations have emerged in Europe over the past five years, with over 1,400 worldwide. But why has kefir’s star risen so dramatically? The climate was certainly ready for it. Recent figures from an Activia-IFOP study (2025) reveal that nearly eight out of ten French people report digestive issues. Nutritionist-dietitian Pauline Gouth explains that fermentation introduces live microorganisms, which can aid digestion and support a healthy gut microbiome.
